In 1990,Japan is involved in research the disinfect function of strong acidic water,which is used as disinfectant in hospital,kitchen and home.At present,here is great contribution in applied research in food and agriculture industry.The research shows that the electrolyzed water not only has the disinfect effect on microbe and virus, but also gradually reduce water without any pollution and residue after exposing in air.Because of high-effectiveness,non-pollution and non residue,acidic water can be extensively applied into the food materials and food equipment and pest prevention of crop to reduce the pesticide usage volume,to relieve the food pesticide residue,and to take guarantee the microbe pollution.

As strawberry shows the disinfect and keeping fresh effect. Before reserving,strawberry separately is soaked into strong acidic water and acidic water with CACL about 10 minutes and is reserved under 10 degree about 12 days.The result show that the strawberry soaked in to the acidic water and CACL could remarkable refrain from breath and activation of polysaccharide of poly and carboxymenthyl cellulose to order to keep it hardness avoiding from corrode.The perfect fruit rate is 100% in the acidic water.But the contrast only85%.The cleaning treatment of electrolyzed water ofr strawberry has the good washing ,disinfecting and keep-fresh functions.

The application of this technology into taking cleaning vegetable to sales and market has a great sense.The research in recent years shows that electrolyzed water has the preventing function for cucumber powdery mildew to control the incidence rate,the preventing function for tomato and grape is so.It is good sense alike low-cost, non-residue and non-pollution for organic agriculture product.The test of electrolyzed water for grape anthrax is also satisfied.the grape anthrax mainly lose 30%fruits crop.The normal pesticide is not ideal to prevent to cause pollution.Here are 4 groups to be tested for the pest prevention of grape.

(1)Non treatment group as the contrast.

(2)Treatment group by normal pesticide

(3)Treatment group by strong acidic water

(4)Treatment group by firstly strong alkali water and secondly acidic water.

This experiment is sprayed by diesel sprayer in 4 weeks,once time 7-10 days.

The result shows:the prevention effect of strong acid is about 43.0%.the effect of 4th group reach 32.2%,the second group is 28.1%.The three groups has the obvious difference.The 3 th group is better 10% than the other.The 4th group is identical even better than the second group.The observation shows the acid water has the stronger acid,but can’t find clear hurt for fruit and leave.

All in all,the fruit and vegetable production is developing to resolve the freshness,reserve and circulation as soon as possible.But,the price of vegetable and fruit make freshness technology and equipment not follow with abroad such as high-cost and advancement.it is critical and outsourcing for Chinese innovation to develop and research low-cost, high effective and low energy technology.
